I don't know what it was but right before I had Olive I craved this granola. Made it in batches and took a bag with me to the hospital! Since then it's had a special place in my heart. When Lily had her sweet little nugget I started making it in batches again to hand off for a midnight nursing snack! It's too good not to share, enjoy sweet friends!

Ingredients

3 C rolled oats
1 C unsweetened coconut
1 C raw cashews
1/4 C flax seed meal
2 tsp cinnamon
3 Tbs coconut sugar
ΒΌ tsp of salt
1/4 C coconut oil
1/4 C almond or cashew butter
1/3 C maple syrup
1/2 tsp vanilla

Instructions

  1. Mix all dry ingredients in a large bowl, in a separate bowl mix wet ingredients. Add wet to dry and mix well
  2. Let sit for 5 minutes in the bowl to incorporate well
  3. On a parchment lined cookie sheet spread granola out about 1/4" deep, this will allow good chunks to form. Bake at 350 for 20-22 minutes. Let the pan cool completely before breaking apart and storing in an air tight container.
