Autumn Spiced Pumpkin Seeds

I'm really excited to share this recipe today. I have make this spice mix for quite sometime but always just did it by taste and never wrote down proportions. During the Fall and Winter months we would keep a jar stocked to add to anything from salad dressing, roasted veggies, chicken and pumpkin seeds or other nuts. My one year even can't stop eating these.

Autumn Spiced Pumpkin Seeds
Curry Pumpkin Seeds

Ingredients

(spice mix)
1 tsp garlic
1 tsp turmeric
1 tsp salt
1 tsp cinnamon
2 tsp chili powder
1 Tbls coconut sugar


1 Tbls maple syrup
1 1/2C Pumpkin seeds

1 tsp grapeseed oil (optional--use if you want soft seeds verses candied seeds)
 

Instructions

  • Preheat oven to 350 and prepare a cookie sheet with parchment paper
  • Mix spices in a small bowl
  • Mix 1Tbls of spice mix with maple syrup (and oil if using), add in pumpkin seeds and stir to coat
  • Spread a single layer of seeds evenly on pan. Bake at 350 for 10mins, watch so not to burn
  • Keep in covered container for a week, sprinkle on salads, soups or just eat them as a snack

** pecans are also great in this mix
