Hello again! Somehow a month has passed since we last talked, but now, as Autumn settles in so do schedules and order and there is something restful about that. Fall is my favorite season. Growing up in the midwest it meant the smell of crisp leaves and the rustling sound of them being trampled by thankful feet. Cinnamon, pumpkin, squash...APPLES. Good gracious I miss a good Midwest Fall! We've prepared a few early fall recipes to quench your soul and ours.

First up... Bacon Jam. We like this served on toast points with cheese, with a good lamb roast or on top of a nice heirloom tomato salad!

Bacon Onion Jam

1lb fresh bacon,
chopped into 1/4" pieces
2 sweet onions, diced
1 C coconut or brown sugar
3/4 C balsamic vinegar
salt & pepper to taste

  • Over medium heat, cook bacon in a cast iron pan, remove from pan leaving the fat
  • Add diced onions and allow to cook in the bacon grease for 15 minutes
  • Pour sugar over the onions and cook for another 5 minutes
  • Add vinegar and cook for another 5 minutes
  • Add bacon back and cook until caramelized
