Easy & Delicious Lemon Curd
What we love about this recipe is that it's shareable! Edible hostess gifts are the best!!!
3/4 cup fresh squeezed lemon juice
1TBSP fresh lemon zest
1/4 c sugar
3 TBSP honey
dash of salt
6 tbsp cold unsalted butter cut into cubes
3 large eggs
In a small bowl, whisk the eggs until no lumps remain. In a separate medium bowl combine the lemon juice, fresh zest, salt, sugar and honey and whisk. add to the egg mixture and stir until well combined. Heat in a saucepan over low heat, whisking continually and adding a few cubes of butter at a time, stirring until they melt. Continue stirring over heat until the curd thickens and ti small bubbles appear on the surface.
Wrap the top with plastic wrap and refrigerate at least one hour before use. Cover and store up to one week. Or, divide into these adorable containers and spread the love!
*Note : this is on the tart side but oh, so delicious. Feel free to increase the sugar if you prefer things a bit sweeter.
