Recipe | Roasted Veggies with Chicken Sausage

We all have those nights when we need a one pot wonder. Today we offer you the one pan wonder... It's easy, delicious and can be made the day ahead and then popped back in the oven to heat up!

INGREDIENTS

2C Brussels Sprouts, halved
1 Red Onion, cut into rings
1 Sweet Potato, cubed
1 head of Cauliflower, chopped
4 Chicken Sausage links, we like an Apple Sausage
2T Oil
salt & pepper to taste

DIRECTIONS

Toss all ingredients in a bowl and then spread them out on a pan (lined with parchment for minimal clean up). Bake for 35-45mins at 400

If you want to add a little flare add a couple of pressed garlic cloves, 1t cumin, 1t dried oregano and a dash of red pepper if you can handle the heat! Try serving in a bowl with a dollop of Greek yogurt and hot sauce.
